This decaf comes from a collection of dedicated small producers in the Popayán region. Ripe cherries are carefully harvested, pulped, washed, and dried before making their way to Caldas, where the lots are blended to create a balanced and expressive cup. Subtle variations in processing across these community lots add depth and complexity.
The coffee is then decaffeinated at Descafecol using a natural ethyl acetate process derived from sugarcane. This gentle method removes caffeine while preserving the coffee’s original character, resulting in a cup that remains vibrant and full of flavor.
